INTRODUCTION TO STRAWBERRIES
Strawberries, scientifically known as Fragaria, originated from the Americas. In the 18th century, European botanists conducted hybridization experiments with two natural strawberry varieties: Fragaria Virginiana from North America and Fragaria Chiloensis from South America. This led to the creation of the widely cultivated garden strawberry, Fragaria Ananassa. Strawberries are primarily grown in temperate climates for their fruit. Countries with significant strawberry production include China, the United States, Japan, Australia, and Turkey. In Vietnam, strawberries were first planted in Dalat by the French in the 20th century. Due to the cool climate and suitable soil conditions, strawberries gradually became a major crop in this highland region.

The strawberry plant is a perennial herbaceous plant with short stems and numerous closely spaced leaves. Axillary shoots emerge from the leaves, and these shoots can develop into main stems, runners, or flower-bearing branches. Strawberries develop after the flowers bloom, starting as green and immature, and turning red when ripe. The fruit is plump, juicy, fragrant, and has a mildly sweet and tart taste, making strawberries a highly favored fruit.
In Vietnam, there are two common varieties of strawberries grown in Dalat: the American Stone Strawberry and the American Fragrant Strawberry. These two varieties produce fruits with various shapes, offering a diverse range. However, to distinguish between the two, the American Fragrant Strawberry has a sweet taste, less tartness, and a fragrant aroma, but its fruits are soft and easily crushed, making it suitable for tourists to eat fresh at the gardens. On the other hand, the American Stone Strawberry has a sweet taste with a hint of tartness, firmer fruits, making them suitable for transportation over longer distances and for use as raw materials in food production processes at factories.

NUTRITIONAL CONTENT OF STRAWBERRIES
In terms of nutritional composition, in 100g of fresh strawberries, they contain 91% water, 7.7% carbohydrates, 1% protein, 0.3% fat, and provide 33 Kcal (according to USDA). Strawberries are rich in vitamins such as A, B1, B2, B9, K, and notably high in vitamin C (60mg/100g of fresh berries). Additionally, strawberries have abundant mineral content, including potassium (K), sodium (Na), iron (Fe), calcium (Ca), phosphorus (P), magnesium (Mg), manganese (Mn), among others. Furthermore, strawberries contain various phenolic compounds, natural antioxidants beneficial for health.
Several studies have reported the discovery of 10 phenolic compounds in strawberry extracts. Specifically, these include cyanidin-3-glucoside, pelargonidin, pelargonidin-3-glucoside, pelargonidin-3-rutinoside, kaempferol, quercetin, kaempferol-3-(6'-coumaroyl) glucoside, 3,4,5-trihydroxyphenyl-acrylic acid, glucosyl ester of (E) -p-coumaric acid, and ellagic acid. These antioxidant compounds have been shown to inhibit the development of cancer cells in the mouth, colon, and prostate gland (Yanjun Zhang et al., 2008).
Many studies have also shown that strawberries have a preventive effect on heart-related diseases. The antioxidant compounds in strawberries help prevent the oxidation of low-density lipoproteins (LDL) by free radicals, thereby inhibiting the accumulation of inflammatory plaques in the arteries, reducing the risk of atherosclerosis (Burton-Freeman et al., 2010).
According to traditional medicine, strawberries have a sweet and sour taste, a cool nature, and are believed to have the following health benefits: nourishing the lungs, regulating digestive functions, nourishing the body, detoxifying, relieving coughs, nourishing the spleen and blood, aiding digestion, reducing fat, and promoting bowel regularity.
Today, strawberries can be consumed fresh, frozen, dried, or processed into various products.
